Ingredients
  

Cajun Seasoning

  • 2 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp black pepper
  • 1/4 tsp salt

Pasta

  • 8 oz penne pasta

Chicken

  • 1 lb boneless, skinless chicken breast cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 tbsp butter

Sauce

  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 15 oz fire-roasted diced tomatoes
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese

Instructions
 

  • Cook pasta according to package directions. Drain and set aside.
  • In a bowl, combine all Cajun seasoning ingredients.
  • Season chicken pieces with half of the Cajun mix.
  • In a skillet, heat oil and butter over medium heat. Cook chicken until browned and cooked through. Remove and set aside.
  • In the same skillet, sauté onion and garlic until fragrant.
  • Add diced tomatoes, remaining seasoning, and chicken broth. Simmer for 5 minutes.
  • Stir in cream and Parmesan. Let simmer until sauce thickens slightly.
  • Add cooked pasta and chicken. Toss to coat and serve warm.

Notes

Feel free to adjust the spice level by changing the amount of cayenne pepper. You can also add vegetables like bell peppers or spinach for extra nutrition.
